Our coffee is roasted and shipped only between Tuesdays and Thursdays to ensure the best possible quality and freshness. Since each coffee has its own specific profile, roast dates may vary, but we guarantee that it will never be older than two weeks from roast date at the time of delivery. What we can promise is that the coffee will always be fresh and taste great when it reaches you.
History
Juan Felipe Ocampo grew up in Ciudad Bolivar, one of the main coffee regions in Antioquia. He purchased his farm in early 2018 after the previous owners, struggling with low coffee prices, could no longer afford to maintain it. When Juan Felipe took over, the farm had been abandoned for more than three years, and only a small portion of the land was still in production.
Recognizing the potential of its high altitude and fertile soil, Juan Felipe began the careful work of restoring the property. Over time, he transformed it into a thriving farm that now covers 60 hectares of productive land and grows more than 20 specialty coffee varieties, including Tabi, Bourbon Chiroso, Chiroso, Geisha, and Yellow Bourbon.
The farm, called La Reserva, benefits from a distinct microclimate. The higher altitude brings cooler, fresher air while maintaining the same sun and rainfall patterns as the surrounding areas, creating the ideal conditions for producing exceptional specialty coffee.
More than 70 percent of the land, about 340 hectares, is a protected natural reserve that serves as a sanctuary for diverse wildlife. It is home to species such as the endangered Andean bear, along with monkeys, ocelots, frogs, butterflies, and many others. The farm also has two natural water sources that supply all production processes. After use, the water is cleaned and returned to its source, ensuring minimal environmental impact.
Variety
Caturra Chiroso is a remarkable variety that has gained attention in Colombia for its outstanding quality. First identified in Antioquia, this variety stands out for its elongated beans and vibrant cup profile with bright acidity, floral notes, and tropical sweetness reminiscent of jasmine and exotic fruit.
Originating from the Caturra lineage, Chiroso has shown excellent adaptability to local growing conditions, thriving at high altitudes while offering good resistance to certain plant diseases. Its combination of resilience and refined flavor has made it a favorite among both farmers and coffee enthusiasts.
Processing
For this lot of Caturra Chiroso, cherries were harvested at peak ripeness and underwent a 12 hour aerobic fermentation before being depulped and fermented in open tanks for another 12 hours. The coffee was then washed in traditional canals and sun dried on raised beds for about 10 days.
